Green Bean Casserole

My green beans don't melt away and are too green!

This is a really fun version of green bean casserole. I have done a couple different versions of this, but I think this one is the best one. It has all the elements of the classic, but with better versions of each. I'm not saying you can substitute your mom's casserole at Thanksgiving, but this is a great version with the same flavors.

1. floured beans Dredged green beans in seasoned flour and then into egg wash.

2. breaded Then breaded the green beans in bread crumbs and dehydrated fried onions. This    represented the crust of the casserole and obviously the beans

3. I then made a mushroom veloute and added a sherry reduction. We cooked the mushrooms for the plate confit style.
