Lime Noodle

Sour Noodle

This is sort of a take on agar noodles I have seen. The basic idea is to take a liquid, thicken it with agar, then cool it and serve it. I took the basic priciple of that, and inserted a whole in the center so it would look like a macaroni noodle. I paired this with seared tuna with basil sorbet. I really wanted something bright that would really stand up to the rich tuna. This is what I came up with.


1.  Thickened Lime Juice   
Lime juice thickened with agar agar, then strained.

2.  Syringe with Lime 
Then put into a syringe, I then wet a skewer and pushed it through the center.

3.  Noodles in water 
Then dropped them into ice water to chill.

4. Lime Macaroni 
Finished product, slice into whatever shape you would like.
